Laptop chargers, monitors, USB cables, and nearby electronics can add electromagnetic interference or ground noise. For first tests, use battery power and move away from strong noise sources.

Yes. The front-end output is an analog signal and can be connected to Arduino, ESP32, STM32, or an external ADC if the input range and sampling rate are appropriate.
